AIR FRYER SPANAKOPITA
(Crispy, cheesy, and PFAS-free perfection 🧀🌿)
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
▪️ 1 tbsp extra virgin olive oil
▪️ ½ small onion, chopped
▪️ 1 garlic clove, minced
▪️ 16 oz raw spinach
▪️ 2 tbsp fresh mint, chopped
▪️ 3 oz feta, crumbled
▪️ ⅓ cup grated parmesan
▪️ ¼ cup shredded mozzarella
▪️ 2 eggs, beaten
▪️ 6 rice paper sheets
▪️ Sesame seeds
▪️ Salt & pepper, to taste
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Heat olive oil in a skillet over medium heat. Sauté onion until soft and translucent.
2. Add garlic and spinach. Cook until wilted.
3. Let mixture cool, then use a kitchen towel to squeeze out excess water.
4. Transfer to a bowl. Mix in mint, feta, mozzarella, parmesan, salt, and pepper.
5. Preheat Fritaire to 400°F.
6. Lightly wet rice paper sheets. Lay flat, clean side down.
7. Place filling in the center, fold into a square parcel, then roll into a spiral.
8. Place on parchment-lined air stand. Brush with egg wash and sprinkle sesame seeds on top.
9. Air fry for 12–15 minutes or until golden and crispy.
10. Serve hot and enjoy the cheesy crunch!
