Air Fryer Spanakopita

AIR FRYER SPANAKOPITA⁠
(Crispy, cheesy, and PFAS-free perfection 🧀🌿)⁠

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:⁠
▪️ 1 tbsp extra virgin olive oil⁠
▪️ ½ small onion, chopped⁠
▪️ 1 garlic clove, minced⁠
▪️ 16 oz raw spinach⁠
▪️ 2 tbsp fresh mint, chopped⁠
▪️ 3 oz feta, crumbled⁠
▪️ ⅓ cup grated parmesan⁠
▪️ ¼ cup shredded mozzarella⁠
▪️ 2 eggs, beaten⁠
▪️ 6 rice paper sheets⁠
▪️ Sesame seeds⁠
▪️ Salt & pepper, to taste⁠

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:⁠
1. Heat olive oil in a skillet over medium heat. Sauté onion until soft and translucent.⁠
2. Add garlic and spinach. Cook until wilted.⁠
3. Let mixture cool, then use a kitchen towel to squeeze out excess water.⁠
4. Transfer to a bowl. Mix in mint, feta, mozzarella, parmesan, salt, and pepper.⁠
5. Preheat Fritaire to 400°F.⁠
6. Lightly wet rice paper sheets. Lay flat, clean side down.⁠
7. Place filling in the center, fold into a square parcel, then roll into a spiral.⁠
8. Place on parchment-lined air stand. Brush with egg wash and sprinkle sesame seeds on top.⁠
9. Air fry for 12–15 minutes or until golden and crispy.⁠
10. Serve hot and enjoy the cheesy crunch!⁠
