You’ll need:⁠
– 8 oz skinless, boneless chicken breast⁠
– 1 tbsp vegetable oil⁠
– 1 small red onion, finely chopped⁠
– 1 small carrot, finely chopped⁠
– 1/4 cup sweet peas⁠
– 1/4 cup sweet corn⁠
– Salt + pepper to taste⁠
– 1 1/2 cups cold, cooked rice (leftovers = besties)⁠
– 1/4 tsp garlic powder⁠
– 2 1/2 tbsp soy sauce⁠
– 2 scrambled eggs⁠
– Sesame seeds for garnish⁠

Instructions:⁠
1. Preheat your Fritaire to 400°F.⁠
2. Cut chicken into 1-inch pieces.⁠
3. Add oil, red onion, carrot, and chicken directly into the Fritaire glass bowl.⁠
4. Air fry for 8–10 minutes, or until chicken is fully cooked (internal temp: 165°F).⁠
5. In a bowl, mix peas, corn, rice, garlic powder, and soy sauce.⁠
