Blueberry Oatmeal Bake ⁠

1 cup rolled oats ⁠
1/2 tsp cinnamon powder ⁠
1/2 tsp vanilla extract ⁠
1 large egg , beaten ⁠
1 small ripe banana, mashed ⁠
1/3 cup whole milk ⁠
1/4 tsp baking powder ⁠
2 tbsp honey ⁠
a pinch of salt ⁠
2 tbsp melted butter, plus more for greasing⁠
1 cup fresh blueberries ⁠
Greek yougurt, to serve ⁠
Maple syrup, for drizzling ⁠

Preheat Fritaire to 350F and grease a baking dish with butter.⁠
In a medium mixing bowl add oats, cinnamon powder, vanilla extract, egg, milk, baking powder, honey, salt and melted butter.⁠
Stir the mixture with a fork or whisk until well combined.⁠
Using a rubber spatula, fold 3/4 cup of mixed berries into the mixture. Pour mixture into prepared casserole dish. Sprinkle all remaining berries over top.⁠
Transfer to the greased baking dish; spread in a mostly even layer using a spatula. Top with the rest of the berries.⁠
Bake for 20 minutes or until set.⁠
Serve immediately and top with a dollop of yogurt and a drizzle of maple syrup.⁠
