1 cup rolled oats
1/2 tsp cinnamon powder
1/2 tsp vanilla extract
1 large egg , beaten
1 small ripe banana, mashed
1/3 cup whole milk
1/4 tsp baking powder
2 tbsp honey
a pinch of salt
2 tbsp melted butter, plus more for greasing
1 cup fresh blueberries
Greek yougurt, to serve
Maple syrup, for drizzling
Preheat Fritaire to 350F and grease a baking dish with butter.
In a medium mixing bowl add oats, cinnamon powder, vanilla extract, egg, milk, baking powder, honey, salt and melted butter.
Stir the mixture with a fork or whisk until well combined.
Using a rubber spatula, fold 3/4 cup of mixed berries into the mixture. Pour mixture into prepared casserole dish. Sprinkle all remaining berries over top.
Transfer to the greased baking dish; spread in a mostly even layer using a spatula. Top with the rest of the berries.
Bake for 20 minutes or until set.
Serve immediately and top with a dollop of yogurt and a drizzle of maple syrup.
