Chessy One - Pot Orzo

Ingredients:⁠
ā–Ŗļø ½ lb boneless chicken thighs or breasts, cubed⁠
ā–Ŗļø 1 tbsp extra virgin olive oil⁠
ā–Ŗļø Juice of 1 lemon⁠
ā–Ŗļø 3 cloves garlic, minced⁠
ā–Ŗļø 1 cup orzo pasta⁠
ā–Ŗļø A handful of baby spinach or kale⁠
ā–Ŗļø 1 ½ cups low sodium chicken broth⁠
ā–Ŗļø ¼ cup milk⁠
ā–Ŗļø ¼ cup grated parmesan⁠
ā–Ŗļø ½ cup shredded cheddar cheese⁠
ā–Ŗļø Salt and pepper, to taste⁠

Instructions:⁠
1. To the Fritaire pot, add olive oil, chicken, lemon juice, garlic, orzo, spinach, chicken broth, and milk.⁠
2. Air fry at 400°F for 30 minutes, or until the chicken reaches 165°F and the pasta is al dente.⁠
3. Stir in grated parmesan.⁠
4. Sprinkle cheddar cheese on top and broil for 2–5 minutes until golden and bubbly.⁠
5. Serve hot and enjoy!⁠
