Recipe:
1 lb chicken thighs
1 tbsp extra virgin olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1/8 tsp cayenne pepper
Garlic butter
5 tbsp unsalted butter, softened
3 galic cloves, minced
1/3 cup grated parmesan
1 tsp pepper flakes
2 tbsp fresh parsley, minced
salt and pepper to taste
Method:
Before you start, make sure to soak your wooden skewers in water for at least 30 minutes.
Preheat Fritaire to 400F
Slice the chicken thighs into bite-sized pieces then combine in a bowl with the oil and seasoning.
Mix thoroughly until combined and marinate for at least 30 minutes.
Thread the chicken onto 4 skewers, ensuring they are tightly packed
Place the skewers in the Fritaire and cook for 10 minutes
Meanwhile in a meadium bowl combine the garlic butter ingredients, remove 1/3 of the butter and set aside.
Flip the skewers and brush them with 1/2 of the remaining garlic butter
Cook for 3 minutes and brush again with butter or until internal temperature reaches 165F.
Remove the skewers from Fritaire and brush with 1/3 of garlic butter (the clean, reserved butter).
Sprinkle the skewers with some extra parmesan and parsley and enjoy.
