Recipe:
4 pcs corn cobs
3 tbsp olive oil
2 tsp smoked paprika
1/2 tsp garlic powder
a pinch salt
1/2 tsp cumin
a pinch pepper
1 pc avocado
1/4 cup sour cream
to taste chopped cilantro
1/2 pc lime (juice)
Method:
stand a cob vertically and cut it lengthwise
cut each corn cob half into quarters lengthwise and cut each piece in half, in a small bowl combin the olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
Lay out the quartered cobs on a tray and brush evenly with the olive oil mixture to coat.
Place the corn ribs in your fritaire and cook for 10-12 mins at 400 F or until tender. Drizzle the corn ribs with some chopped cilantro and some lime jiuce and serve with avocado crema.
Avocado dip:
In a blender or food processor, blend the avocado and sour cream, and a pinch of salt until smooth .
