Crispy Eggplant ⁠

1 italian Eggplant⁠
1 egg, beaten ⁠
1/2 tsp dried oregano⁠
1/2 tsp garlic powder ⁠
a pinch cayenne ⁠
1 tsp smoked paprika⁠
1/2 cup flour ⁠
1/2 cup panko breadcrumbs ⁠
olive oil cooking spray ⁠
salt and pepper ⁠

For serving ⁠
Marinara sauce ⁠
Grated parmesan ⁠

Preheat your Fritare to 400 F⁠
Prick the eggplant and aif fry for 30-40 minutes or until completely soft⁠
Peel off the skin and gently flatten the cooked eggplant with a fork.⁠
To a medim bowl add egg, oregano, garlic powder, cayenne and smoked paprika and beat.⁠
Dip the eggplant into the egg mixture, the coat with flour.⁠
Dip again the eggplant into the egg mixture then coat with panko.⁠
Spray with olive oil cooking spray and air fry for 5 to 10 minutes or until golden brown, flipping halfway through.⁠
Season with salt and pepper and serve with marinara sauce and grated parmesan.⁠
