1 italian Eggplant
1 egg, beaten
1/2 tsp dried oregano
1/2 tsp garlic powder
a pinch cayenne
1 tsp smoked paprika
1/2 cup flour
1/2 cup panko breadcrumbs
olive oil cooking spray
salt and pepper
For serving
Marinara sauce
Grated parmesan
Preheat your Fritare to 400 F
Prick the eggplant and aif fry for 30-40 minutes or until completely soft
Peel off the skin and gently flatten the cooked eggplant with a fork.
To a medim bowl add egg, oregano, garlic powder, cayenne and smoked paprika and beat.
Dip the eggplant into the egg mixture, the coat with flour.
Dip again the eggplant into the egg mixture then coat with panko.
Spray with olive oil cooking spray and air fry for 5 to 10 minutes or until golden brown, flipping halfway through.
Season with salt and pepper and serve with marinara sauce and grated parmesan.
