INGREDIENTS
⭐ 1 Italian eggplant
⭐ 1 egg, beaten
⭐ ½ tsp dried oregano
⭐ ½ tsp garlic powder
⭐ A pinch of cayenne
⭐ 1 tsp smoked paprika
⭐ ½ cup flour
⭐ ½ cup panko breadcrumbs
⭐ Olive oil cooking spray
⭐ Salt & pepper, to taste
FOR SERVING
⭐ Marinara sauce
⭐ Grated parmesan
RECIPE
1️⃣ Preheat Fritaire to 400°F.
2️⃣ Prick the eggplant all over and air fry for 30–40 minutes, until completely soft.
3️⃣ Peel off the skin and gently flatten the cooked eggplant with a fork.
4️⃣ In a medium bowl, beat the egg with oregano, garlic powder, cayenne, and smoked paprika.
5️⃣ Dip the eggplant into the egg mixture, then coat with flour.
6️⃣ Dip again into the egg mixture, then coat with panko breadcrumbs.
7️⃣ Lightly spray with olive oil and air fry for 5–10 minutes, flipping halfway, until golden and crispy.
8️⃣ Season with salt and pepper, serve with marinara and grated parmesan, and enjoy every crunchy bite. 😌🍅🧀
