Crispy Eggplant

Golden on the outside, tender on the inside, and dangerously dunkable. This crispy eggplant is proof that simple ingredients + Fritaire = instant obsession.⁠

INGREDIENTS⁠
⭐ 1 Italian eggplant⁠
⭐ 1 egg, beaten⁠
⭐ ½ tsp dried oregano⁠
⭐ ½ tsp garlic powder⁠
⭐ A pinch of cayenne⁠
⭐ 1 tsp smoked paprika⁠
⭐ ½ cup flour⁠
⭐ ½ cup panko breadcrumbs⁠
⭐ Olive oil cooking spray⁠
⭐ Salt & pepper, to taste⁠

FOR SERVING⁠
⭐ Marinara sauce⁠
⭐ Grated parmesan⁠

RECIPE⁠
1️⃣ Preheat Fritaire to 400°F.⁠
2️⃣ Prick the eggplant all over and air fry for 30–40 minutes, until completely soft.⁠
3️⃣ Peel off the skin and gently flatten the cooked eggplant with a fork.⁠
4️⃣ In a medium bowl, beat the egg with oregano, garlic powder, cayenne, and smoked paprika.⁠
5️⃣ Dip the eggplant into the egg mixture, then coat with flour.⁠
6️⃣ Dip again into the egg mixture, then coat with panko breadcrumbs.⁠
7️⃣ Lightly spray with olive oil and air fry for 5–10 minutes, flipping halfway, until golden and crispy.⁠
8️⃣ Season with salt and pepper, serve with marinara and grated parmesan, and enjoy every crunchy bite. 😌🍅🧀⁠
