INGREDIENTS:
2 cups of all-purpose flour
3/4 cup of unsalted butter (room temperature)
1/8 tsp of fine sea salt
1/2 cup of icing sugar (save some later for sprinkling)
1 egg (room temperature)
1 tbsp of orange zest
1-2 cups of raspberry or strawberry jam
RECIPE:
1. In a stand mixer fitted with a paddle attachment, beat the butter and sugar until light and fluffy.
2. Add the egg, salt, and lemon zest to the mixer and beat on high speed until combined.
3. Add the flour to the wet ingredients and mix on low until combined.
4. Add pink food coloring as needed.
5. Wrap the dough into plastic wrap and let it rest in the fridge for at least 1 hour.
6. Put the dough between two pieces of parchment paper and roll out to 1/8 inch of thickness using a rolling pin. Chill it for 30 mins.
7. Use a round cookie cutter to cut out your cookies. One half should be plain and the other half should have a star cut-out
8. Take away the extra scraps to re-roll to make more cookies.
9. To prevent the cookies from losing their shape, chill them for 20 mins.
10. Transfer the cookies to the Fritaire baking tray lined with parchment paper (you may need to bake the cookies in a few batches).
11. Bake at 160° C for 7 minutes.
12. Leave to cool for 5 minutes.
13. Sprinkle icing sugar on top of the star cut-out cookies, then spread the jam on the inside of the plain cookies.
14. Sandwich them together with the powdered sugar stars on top.
