Granola Bars

1 cup rolled oats ⁠
1/2 cup oat flour (or 1/2 cup rolled oats ground in a food processor)⁠
1/4 cup coconut flakes ⁠
1/4 tsp salt ⁠
1/2 tsp cinnamon ⁠
1/3 cup dried cranberries ⁠
1/3 cup coconut oil, melted ⁠
1/4 cup sugarfree peanut butter ⁠
1/3 cup honey ⁠
1/2 tsp vanilla essence ⁠

Preheat Fritaire to 320F.⁠
Line a baking pan with parchment paper and set aside.⁠
In a mixing bowl add all the wet ingredients and mix well.⁠
Pour the dry ingredients into the bowl with the wet ingredients and stir until the mixture is evenly coated.⁠
Place the granola into the baking pan and press down firmly until thr mixture is completely even and flat.⁠
Bake for 20 minutes, then let the granola cool down completely and place it in the freezer for 5 minutes to let it stiffen up.⁠
Cut the granola into bars and enjoy!⁠
