MINI PUMPKIN CHEESECAKE

RECIPE:⁠
1/2 cup greek yogurt⁠
1/3 cup pumpkin puree ⁠
1/2 tsp vanilla extract ⁠
1 large egg⁠
5 tbsp maple syrup ⁠
1 tbsp tapioca flour ⁠
1 tsp cinnamon ⁠
1/4 tsp ground ginger⁠
1/8 tsp all spice ⁠
a pinch of salt ⁠
Whipped cream ⁠
Caramel sauce ⁠

INGREDIENTS:⁠
Preheat Fritaire to 320F⁠
In a medium bowl, beat together all the ingredients.⁠
Divide the mixture into 3 ramekins and bake for 20 minutes.⁠
Cool at room temperature for at least 1/2 hour, then garnish with whipped Cream and caramel sauce⁠.⁠
