ROMESCO SAUCE
(Perfect with toasted sourdough 🥖)
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
▪️ ½ cup almonds
▪️ 2 small red bell peppers
▪️ 1 medium tomato
▪️ 1 whole garlic head
▪️ ¼ tsp fine sea salt
▪️ 1½ tbsp red wine vinegar
▪️ ½ tsp smoked paprika
▪️ ⅛ tsp cayenne pepper
▪️ 2 tbsp extra virgin olive oil
▪️ Sourdough bread (for serving)
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Blanch almonds in boiling water for 30 seconds. Drain and remove skins.
2. Air fry almonds in Fritaire at 400°F for 6–7 mins until fragrant. Set aside.
3. Add bell peppers, tomato, and garlic to Fritaire. Roast at 350°F for 30–35 mins.
4. Let veggies cool, then remove skins.
5. Blend all ingredients (except oil) until thick and coarse.
6. Slowly drizzle in olive oil while blending until desired texture.
7. Taste and adjust salt and pepper.
8. Serve with toasted sourdough!
