Romesco Sauce

ROMESCO SAUCE⁠
(Perfect with toasted sourdough 🥖)⁠

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:⁠
▪️ ½ cup almonds⁠
▪️ 2 small red bell peppers⁠
▪️ 1 medium tomato⁠
▪️ 1 whole garlic head⁠
▪️ ¼ tsp fine sea salt⁠
▪️ 1½ tbsp red wine vinegar⁠
▪️ ½ tsp smoked paprika⁠
▪️ ⅛ tsp cayenne pepper⁠
▪️ 2 tbsp extra virgin olive oil⁠
▪️ Sourdough bread (for serving)⁠

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:⁠
1. Blanch almonds in boiling water for 30 seconds. Drain and remove skins.⁠
2. Air fry almonds in Fritaire at 400°F for 6–7 mins until fragrant. Set aside.⁠
3. Add bell peppers, tomato, and garlic to Fritaire. Roast at 350°F for 30–35 mins.⁠
4. Let veggies cool, then remove skins.⁠
5. Blend all ingredients (except oil) until thick and coarse.⁠
6. Slowly drizzle in olive oil while blending until desired texture.⁠
7. Taste and adjust salt and pepper.⁠
8. Serve with toasted sourdough!⁠
