3-4 lb whole chicken
3 tbsp butter, melted
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chili powder
1 tbsp dried oregano
1/2 tsp black pepper
salt and pepper, to taste
3/4 sprigs fresh rosemary
3/4 sprigs fresh thyme
Pat the chicken dry with some paper towels.
In a small bowl mix, butter spices, dried oregano and salt together
Brush the spice mixture over the chicken and place the fresh herbs inside the chicken
Truss the chicken, then force the rotisserie shaft lengthwise through and center.
Slide forks onto the shafts from either end into chicken, then lock in place with set screws.
Insert the chicken with the rotisserie shaft into Fritaire and assemble the rotisserie motor
Start the rotisserie motor and roast the chicken at 350 F for 1 hour or until a termometer reads 165 when inserted into the thigh
Once your chicken is done, remove from Fritaire and let it rest 10 minutes before cutting.
