For the marinade:⁠
• 1 lb pork leg or pork shoulder, sliced⁠
• 1 small white onion, thinly sliced⁠
• 3 guajillo chiles⁠
• 3 tbsp lime juice⁠
• 1/4 cup orange juice⁠
• 3 garlic cloves⁠
• 3 small red bell peppers⁠
• 2 tsp ground cumin⁠
• 2 tsp dried oregano⁠
• 1/4 cup vegetable oil⁠
• Salt + pepper to taste⁠

For the tacos:⁠
• 1 pineapple, cleaned and sliced⁠
• 2 tbsp fresh cilantro, chopped⁠
• 2 limes, cut into wedges⁠
• Pickled red cabbage and onion⁠
• Corn tortillas⁠
• Salsa verde (or your favorite salsa)⁠

INSTRUCTIONS⁠
1️⃣ Prepare the marinade:⁠
• Soak guajillo chiles in boiling water for ~10 minutes until softened.⁠
• Remove seeds + stems.⁠
• Blend chiles with all marinade ingredients until smooth.⁠
⁠
2️⃣ Marinate the pork:⁠
• Coat sliced pork in marinade.⁠
• Cover and refrigerate for 4–8 hours.⁠
⁠
3️⃣ Assemble on Fritaire rotisserie:⁠
• Preheat Fritaire to 375°F.⁠
⁠
On the rotisserie shaft, stack in this order: pineapple slice → marinated pork → sliced onions → repeat → end with pineapple slice on top.⁠

4️⃣ Roast:⁠
• Roast for 1.5 to 2 hours.⁠
• Remove, rest for 10 minutes, then carve.⁠

5️⃣ Assemble tacos:⁠
• Slice meat + pineapple.⁠
