Warm Eggplant Salad

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:⁠
▪️ 1 large Italian eggplant, rinsed⁠
▪️ 1 small red bell pepper, rinsed⁠
▪️ ½ cup black olives, pitted⁠
▪️ 3 tbsp capers, drained⁠
▪️ 2 tbsp fresh oregano leaves⁠
▪️ 2 oz feta cheese⁠
▪️ 1 tbsp chopped parsley⁠
▪️ Extra virgin olive oil, for drizzling⁠
▪️ Salt and pepper, to taste⁠

Instructions:⁠
1. Preheat Fritaire to 400°F.⁠
2. Insert the rotisserie shaft lengthwise through the eggplant and secure with forks.⁠
3. Place the red bell pepper on the Air stand.⁠
4. Roast both for 35–40 minutes, or until soft.⁠
5. While roasting, mix black olives, olive oil, capers, and oregano in a bowl.⁠
6. Let the veggies cool for at least 15 minutes.⁠
7. Peel and slice the eggplant. Finely chop the bell pepper.⁠
8. Plate the eggplant warm and top with bell pepper, olive mix, crumbled feta, parsley, salt, pepper, and a drizzle of olive oil.⁠

Perfect as a cozy side or light main.⁠
