𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
▪️ 1 large Italian eggplant, rinsed
▪️ 1 small red bell pepper, rinsed
▪️ ½ cup black olives, pitted
▪️ 3 tbsp capers, drained
▪️ 2 tbsp fresh oregano leaves
▪️ 2 oz feta cheese
▪️ 1 tbsp chopped parsley
▪️ Extra virgin olive oil, for drizzling
▪️ Salt and pepper, to taste
Instructions:
1. Preheat Fritaire to 400°F.
2. Insert the rotisserie shaft lengthwise through the eggplant and secure with forks.
3. Place the red bell pepper on the Air stand.
4. Roast both for 35–40 minutes, or until soft.
5. While roasting, mix black olives, olive oil, capers, and oregano in a bowl.
6. Let the veggies cool for at least 15 minutes.
7. Peel and slice the eggplant. Finely chop the bell pepper.
8. Plate the eggplant warm and top with bell pepper, olive mix, crumbled feta, parsley, salt, pepper, and a drizzle of olive oil.
