2 large zucchini⁠
4 oz ham, sliced⁠
4 oz mozzarella cheese , sliced⁠
½ cup parmesan grated⁠
1 cup panko breadcrumbs ⁠
1 large egg, lightly beaten ⁠
1/2 tsp fine sea salt ⁠
1/4 tsp ground black pepper⁠
Extra virgin olive oil spray, for cooking ⁠
Marinara sauce, for serving ⁠

- Slice two sides of each zucchini lengthwise to create two flat sides.⁠
- Using a mandolin or a vegetable peeler, slice each zucchini into thin flat strips.⁠
- Lay the zucchini strips flat on a kitchen towel and sprinkle them with salt. ⁠
- Let sit for at least 20 minutes, then blot away the excess water.⁠
- In a flat dish mix together the panko, parmesan, salt and pepper.⁠
- Roll the zucchini around the ham and the mozzarella and dredge the zucchini rolls in egg, then in panko.⁠
- Assemble 2-3 skewers and spray with extra virgin olive oil spray (you might have to cook them in batches).⁠
- Air fry at 400F for 10-15 minutes or until golden brown.⁠
Serve hot with marinara sauce.⁠
