Ingredients:
▪️ 3 lbs large tomatoes
▪️ 1 medium yellow onion, quartered
▪️ 2 tbsp extra virgin olive oil (plus more for drizzling)
▪️ 2 sprigs fresh rosemary
▪️ 1 ½ tsp smoked paprika
▪️ 1 cup cream
▪️ ¼ cup fresh basil, chopped (plus more for garnish)
▪️ ¼ cup grated parmesan (plus more for sprinkling)
▪️ Optional: sourdough bread + cheddar (for grilled cheese)
Instructions:
1. Preheat Fritaire to 400°F.
2. Add tomatoes, onion, olive oil, rosemary, and smoked paprika to the pot.
3. Roast for 40–45 minutes until tomatoes release their juices and onion is tender.
4. Stir in cream, basil, and parmesan.
5. Blend with an immersion blender until smooth.
6. Serve hot with a gooey grilled cheese on the side.
