INGREDIENTSā
ā 2 small whole cauliflowersā
ā 5 tbsp extra virgin olive oilā
ā 1 tsp smoked paprikaā
ā 1 clove garlic, mincedā
ā 1 tsp fine sea saltā
ā 1 tsp ground corianderā
ā 1 tsp cuminā
ā 1 tbsp parsley, choppedā
ā
FOR THE YOGURT TAHINI SAUCEā
ā 6 tbsp full-fat Greek yogurtā
ā 3 tbsp tahiniā
ā 1 lemon, zested and juicedā
ā Salt and pepper, to tasteā
ā 1 tbsp zaāatar (optional)ā
ā
RECIPEā
1ļøā£ In a small bowl, mix olive oil, paprika, garlic, salt, coriander, and cumin.ā
2ļøā£ Brush the mixture evenly over the whole cauliflowers.ā
3ļøā£ Insert the rotisserie shaft lengthwise through the center and secure with the forks.ā
4ļøā£ Place into your Fritaire and roast at 350°F for about 1 hour, brushing occasionally with the oil mixture.ā
5ļøā£ While roasting, mix yogurt, tahini, lemon juice and zest, salt, pepper, and zaāatar until smooth.ā
6ļøā£ Once cauliflower is tender and golden, remove and break into thick chunks.ā
7ļøā£ Spoon over the yogurt tahini sauce and finish with fresh parsley.ā
