INGREDIENTS⁠
⭐ 2 small whole cauliflowers⁠
⭐ 5 tbsp extra virgin olive oil⁠
⭐ 1 tsp smoked paprika⁠
⭐ 1 clove garlic, minced⁠
⭐ 1 tsp fine sea salt⁠
⭐ 1 tsp ground coriander⁠
⭐ 1 tsp cumin⁠
⭐ 1 tbsp parsley, chopped⁠
⁠
FOR THE YOGURT TAHINI SAUCE⁠
⭐ 6 tbsp full-fat Greek yogurt⁠
⭐ 3 tbsp tahini⁠
⭐ 1 lemon, zested and juiced⁠
⭐ Salt and pepper, to taste⁠
⭐ 1 tbsp za’atar (optional)⁠

RECIPE⁠
1ļøāƒ£ In a small bowl, mix olive oil, paprika, garlic, salt, coriander, and cumin.⁠
2ļøāƒ£ Brush the mixture evenly over the whole cauliflowers.⁠
3ļøāƒ£ Insert the rotisserie shaft lengthwise through the center and secure with the forks.⁠
4ļøāƒ£ Place into your Fritaire and roast at 350°F for about 1 hour, brushing occasionally with the oil mixture.⁠
5ļøāƒ£ While roasting, mix yogurt, tahini, lemon juice and zest, salt, pepper, and za’atar until smooth.⁠
6ļøāƒ£ Once cauliflower is tender and golden, remove and break into thick chunks.⁠
7ļøāƒ£ Spoon over the yogurt tahini sauce and finish with fresh parsley.⁠
