INGREDIENTS⁠
⭐ 2 medium zucchini, grated⁠
⭐ ā…“ cup chickpea flour⁠
⭐ ½ cup corn kernels (canned or frozen)⁠
⭐ ¼ cup grated parmesan⁠
⭐ 1 small garlic clove, minced⁠
⭐ ½ tsp cumin⁠
⭐ ½ tbsp dried oregano⁠
⭐ ½ tsp baking powder⁠
⭐ Salt & pepper, to taste⁠
⭐ 1 small egg, lightly beaten⁠
⭐ Cooking oil spray⁠
⭐ Sour cream, for serving⁠

RECIPE⁠
1ļøāƒ£ Transfer grated zucchini to a towel, wrap it up, and squeeze out as much liquid as possible.⁠
2ļøāƒ£ Add zucchini to a medium bowl with chickpea flour, corn, parmesan, garlic, cumin, oregano, baking powder, salt, and pepper.⁠
3ļøāƒ£ Stir until well combined. If the mixture feels too wet, add a bit more chickpea flour.⁠
4ļøāƒ£ Preheat your Fritaire to 380°F.⁠
5ļøāƒ£ Shape the mixture into 5–6 patties.⁠
6ļøāƒ£ Place patties on the air stand lined with parchment paper. Lightly spray with cooking oil.⁠
7ļøāƒ£ Air fry for 3–4 minutes per side, until golden and crispy.⁠
